You will need:
¼ liter of milk
10 apricots (or cherries, apples...)
60 grams sugar
70 grams flour
3 eggs
vanillated sugar (or vanilla)
butter to grease the pan.
(for metric to imperial conversions, I find onlineconversion is very useful)
Preheat the oven to 200° Celsius (Th. 6). Grease a glass cake pan.
Wash the apricots, cut them in halves, remove the stones. Lay the halves into the pan.
Mix the sugar and eggs (I like to use an electric mixer and "pulse" so the mix is "fluffy"); add the milk, the flour, and the vanillated sugar.
I also add cinnamon and a bit of ginger. I'm sure the "apple pie spice" I used to find in the US would be great!
Pour the batter into the pan. Bake for 35 minutes.
Your "clafoutis aux abricots" is just as good warm or cold. Enjoy!
